No-Bake Strawberry-Lime Bars
Prep: 25 minutes plus chilling
6 tablespoons Food Club Sweet Cream Unsalted Butter
8 whole sheets Food Club Honey Graham Crackers, finely crushed
2 tablespoons Food Club Light Brown Sugar
1/2 cup Food Club Sweetened Condensed Milk
1 package (8 ounces) Food Club Original Cream Cheese, cut into small pieces, room temperature
1/4 cup Food Club Pure Cane Granulated Sugar
1 tablespoon fresh lime juice
1 tablespoon lime zest plus additional for garnish (optional)
1/2 teaspoon Food Club Pure Vanilla Extract
1/2 cup whipped cream
1.Prepare Crust: Spray 8-inch square baking dish with cooking spray. In large microwave-safe bowl, heat butter in microwave oven on high 45 seconds or until melted; stir in graham cracker crumbs and brown sugar. Press graham cracker mixture into bottom of prepared dish; refrigerate 30 minutes or until firm. Makes about 2 cups.
2.Prepare Filling: In large bowl, with mixer on medium-low speed, beat strawberries and condensed milk 1 minute or until strawberries are slightly mashed. Add cream cheese, granulated sugar, lime juice, lime zest and vanilla extract; beat 2 minutes or until smooth. Spread filling over crust; cover and freeze at least 4 hours or overnight.
3.Run knife around edges of dish to loosen bar; cut into 16 squares. Serve bars dolloped with whipped topping garnished with strawberry slices and lime zest, if desired.
