Instant Pot® Pork Loin Carnitas Tacos

Prep: 15 minutes plus pressurizing and standing
Pressure Cook/Broil: 45 minutes • Serves: 12

1 Swift G.T. Boneless Center-Cut Pork Loin, cut into 2-inch pieces (about 4 pounds)
1 cup Food Club® Vegetable Oil
2 teaspoons Food Club® Ground Cumin
2 teaspoons Food Club® Oregano Leaves
1-1/2 teaspoons Food Club® Chili Seasoning Mix
1 teaspoon Food Club® Black Pepper
1/2 cup Fresh Harvest™ Orange Juice
24 (6-inch) corn tortillas
Optional Toppings: Food Club® Salsa, Food Club® Sour Cream, chopped avocado, chopped jalapeños, thinly sliced radishes, queso fresco and/or lime wedges for toppings

1. On 6-quart Instant Pot, select “meat” setting. In large bowl, toss pork, oil, cumin, oregano, seasoning mix and pepper; transfer to Instant Pot and stir in orange juice.

2. Place lid on Instant Pot and close pressure valve to seal; pressure cook on high 35 minutes. Quick release pressure; let stand 15 minutes. Remove lid and transfer pork to large bowl; reserve liquid. With 2 forks, shred pork.

3. Preheat broiler to high; line rimmed baking pan with nonstick aluminum foil. Heat tortillas as label directs. Spread shredded pork on prepared pan; broil 10 minutes or until crisp and browned, stirring once halfway through cooking. Makes about 6 cups.

4. Serve carnitas in tortillas drizzled with reserved liquid and toppings, if desired. Makes 24 tacos.
