Honey-Roasted Sweet Potatoes

Prep: 15 minutes
Roast: 20 minutes • Serves: 4

Nonstick cooking spray
2 large sweet potatoes, diced
1 tablespoon Food Club Honey
1 tablespoon Food Club Olive Oil
1 teaspoon Fresh Harvest Orange Juice
1/2 teaspoon Food Club Cinnamon
1/8teaspoon salt
2 tablespoons chopped hazelnuts
2 teaspoons chopped fresh cilantro

1.Preheat oven to 375°. Spray rimmed baking pan with cooking spray.

2.In large bowl, toss potatoes, honey, oil, orange juice, cinnamon and salt until well combined; spread in single layer on prepared pan. Roast 20 minutes or until potatoes are tender.

3.In small skillet, toast hazelnuts over medium heat 4 minutes or until lightly browned, stirring occasionally; transfer to plate to cool.

4.Serve potatoes sprinkled with hazelnuts and cilantro.
