Beef Tenderloin with Garlic-Parmesan Caramelized Onions & Gravy

Prep: 20 minutes
Roast/Cook: 30 minutes • Serves: 8

3 tablespoons garlic with parmesan & basil gourmet butter plus additional for serving (optional)
2 large yellow onions, thinly sliced
1 teaspoon Food Club Granulated Sugar
1 center-cut beef tenderloin (about 3 pounds)
1 teaspoon kosher salt
3/4 teaspoon Food Club Ground Black Pepper
2 tablespoons Food Club Olive Oil
2 envelopes (.87-ounce each) reduced sodium brown gravy mix

1.Preheat oven to 375°. In large skillet, melt butter over medium-low heat. Add onions and 2 tablespoons water; cover and cook 10 minutes, stirring occasionally. Uncover; cook 10 minutes or until very soft, stirring occasionally. Add sugar; cook 10 minutes or until golden brown, stirring occasionally. Makes about 1-1/4 cups.

2.Sprinkle beef with salt and pepper. In separate large skillet, heat oil over medium-high heat; add beef and sear 1 minute on each side or until outside is browned. Place beef on rimmed baking pan; roast 25 minutes or until internal temperature reaches 135° for medium-rare. Transfer beef to cutting board; tent with aluminum foil and let stand 10 minutes. (Internal temperature will rise to 145° upon standing.)

3.Prepare gravy mix as label directs. Makes about 2 cups.

4.Serve beef topped with butter, if desired, along with onions and gravy.
